One of my older brothers, Jack, loves to bake. He apprenticed for years under the master pastry chef, Raphael Dequeker, at Valbella Restaurant in Greenwich. Raphael studied under the world-renowned Alain Ducasse, as well as other high caliber chefs. When Jack worked at Valbella, he helped prepare desserts and extensively practiced advanced baking and dessert techniques. When Covid hit and all the restaurants were shut down, Raphael opened a pop-up bakery out of the back of the Valbella kitchen. He sold a variety of danishes, chocolates and macaroons. Jack assisted him in making all these French pastries. The pop-up did so well, that Raphael opened a storefront bakery in Greenwich, December 2020 called Raphael’s. Jack helped him launch the bakery and worked long hours starting at 5am during Christmas break. Jack help prepare and bake all the breads, danishes, pastries, and desserts.
During this time, Jack launched his own business – JaxSnax, a craft gelato and baked goods business. Some of my favorite yummy gelato flavors he makes are Vanilla Bean, S’mores, and Chix (Vanilla strewn with Twix). He also has a whole CBD line of gelato flavors with fun names such as Twisted Chix, Edible Cookie Dough and Vanilla Trip. In addition, he sells his famous Toffee and Chocolate Chip cookies. For family and friends, some of his most popular desserts are chocolate and vanilla souffle, deconstructed key lime pie, chocolate lava cake and of course my all-time favorite – apple tart!
